3 Tbsp. olive oil or melted margarine
3 Tbsp. flour
2 1/2 cups water or vegetable stock
3 Tbsp. dark soy sauce
salt and pepper to taste

• Heat the oil in a saucepan and add the flour. Stir over moderate heat for a few minutes until the flour turns brown.
• Pour in the water or stock and stir slightly until thickened. Simmer for 10 minutes, then add the soy sauce and a little seasoning to taste, if desired.
