Vegan Chili

1 large can red kidney beans, rinsed and drained
1 jar tomato paste
1 small bowl dried soya pieces (soaked in hot water and soya sauce for 15 minutes) or defrosted
Realeat soya pieces
1 cup water
1 green pepper, chopped
1 onion, chopped
Chillies (start with 1 or 2 and work your way up)
1 tsp. fresh basil or 1/2 tsp. dried basil
1/2 tsp. ground cumin
1/4 tsp. salt
2 cloves garlic, minced
330 g hot cooked rice

• In a large saucepan, combine all the ingredients except the rice. Bring the mixture to a boil then reduce the heat.
• Simmer, covered, for 30 minutes, stirring occasionally. Serve with the hot cooked rice.

Makes 4 servings
