1/2 cup diced, peeled mango
1/2 cup diced, fresh pineapple
1/2 cup drained, sliced water chestnuts
1/2 cup sliced celery
1/4 cup sliced green onions
1 Tbsp. mango chutney
1 Tbsp. vegan mayonnaise
1 Tbsp. vegan sour cream
2 tsp. lemon juice
1 tsp. minced, peeled, fresh ginger root
1/2 tsp. salt
1/4 tsp. pepper
1 large papaya, peeled and cut into 10 slices
• Combine the seitan, mango, pineapple, water chestnuts, celery, and green onions in a large bowl.
• Combine the chutney, vegan mayonnaise, vegan sour cream, lemon juice, ginger root, salt, and pepper in a small bowl.
• Stir the chutney mixture into the seitan mixture and mix well.
• Divide among five plates, garnish each plate with two slices of papaya, and serve.
