1/2 green pepper, diced
4 green onions, diced
1/8 cup green or black olives, diced
1 habañero pepper, finely diced
1 Tbsp. vegetable oil
1 lb. tofu cut into 1/2-inch cubes
2 Tbsp. tamari (or soy sauce)
2-3 cups cooked rice
• Sauté the vegetables in the oil in a large frying pan.
• Toss in the tofu and tamari and cook for 10 minutes.
• Serve with the rice on the tortillas.
