Slow Cooker Lentil Soup

2 cups dried lentils
8 cups water
4 cups vegetable broth
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped carrot
3 Tbsp. snipped parsley
1 garlic clove, crushed
2 1/2 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. dried leaf oregano
14.5-oz. can chopped tomatoes
2 Tbsp. wine vinegar

• Rinse the lentils and place in a slow cooker. Add the remaining ingredients, except the tomatoes and vinegar. Cook on low for 8 to 10 hours.
• Add the tomatoes and vinegar. Cook on high for 15 minutes, until hot.

Makes 8 servings
