Silky Walnut-Portobello Gravy

4-5 medium-to-large portobello mushrooms, chopped
1 cup walnuts
1/4 cup diced onions
2 Tbsp. olive oil
1 cup water
2 cloves garlic, minced
Salt and fresh pepper, to taste
Water, as needed
1/4 cup tamari, or to taste
1/4 cup olive oil, or as needed
1/4 cup nutritional yeast

• Sauté the mushrooms, walnuts, and onions in the olive oil for 4 to 5 minutes.
• Add the water and simmer until the walnuts are tender, about 10 minutes.
• Remove from the heat and let cool for 5 minutes.
• Place all the ingredients in a food processor or blender and blend until smooth.

Makes 4 to 6 servings
