‘Shrimp’ Linguine

1/2 lb. linguine
1/4 cup extra virgin olive oil
4 cloves garlic, chopped coarsely
1 pkg. vegan shrimp
1 tsp. lemon pepper
Dash salt or garlic salt
1/4 cup chopped fresh parsley

• Cook the pasta according to the package directions.
• In a saucepan, heat the olive oil on very low heat. Add the garlic and slowly sauté for 30 minutes.
• As the garlic is finishing, take 2 to 3 Tbsp. of the oil from the garlic pan and put it in a new skillet over medium heat. Cook the “shrimp” with the lemon pepper and salt until lightly browned on both sides.
• Drain the pasta and transfer to a serving bowl. Add the vegan shrimp, the remaining garlic oil, and the fresh parsley, and toss. Add a dash of fresh olive oil, if needed.
• Serve immediately.
