Shoo Fly Cake
4 cups flour
2 cups sugar
1 1/2 cups shortening
1/2 tsp. salt
1 cups water
1 1/4 cup sugar
1/2 cup blackstrap molasses
1 Tbsp. vinegar
1 Tbsp. baking soda
• In a large mixing bowl combine the flour, sugar, shortening and salt until it resembles coarse crumbs.
• In a heavy bottom sauce pan over medium heat combine the water, sugar, molasses and vinegar. Bring to a boil. Remove from heat and whisk in baking soda.
• Lightly oil a 9×13 inch baking dish. Pour the molasses sauce evenly over the bottom. Top with the crumble mixture.
• Bake at 375°F for 30 to 40 minutes, or until a toothpick inserted in the middle comes out clean. Let cool.
