Savory Chicken-Style Breaded Tofu

3/4 cup unbleached white flour
3/4 cup gluten flour
1 1/2 cups chicken-style broth powder (try Eco-Cuisine “Chicken Style” Broth Powder)
6 lbs. extra-firm tofu
1 cup canola oil

• Stir the flours and the broth powder together in a large bowl until evenly dispersed.
• Slice the tofu into 2-oz. pieces and rinse. Let drain for at least 5 minutes.
• Toss with the flour mixture and let sit for about 2 to 3 minutes. Remove from the mixture and shake to remove excess.
• Preheat a large sauté pan on medium heat with half of the oil. Sauté half of the tofu until lightly browned, approximately 3 to 5 minutes, then flip and lightly brown the other side. Remove from the pan. Add the remaining oil and sauté the remaining tofu.

Makes 8 servings
