Red Hot Potatoes

1/2 tsp. lemon juice
Pinch of brown sugar
4 Tbsp. oil
2 medium onions, thinly sliced
1 tsp. red chili powder
1 big tomato, chopped
4 big potatoes, boiled and cut into cubes
Salt, to taste

• Mix the lemon juice and brown sugar in a small bowl. Set aside.
• Heat the oil in a large pan over medium heat. Add the onions and sauté until lightly browned. Reduce the heat. Add the red chili powder and cook for a few seconds, until fragrant.
• Add the tomatoes and cook over medium-low heat until tender, about 3 minutes.
• Add the lemon juice mixture and the boiled potatoes. Season with the salt and sprinkle with water. Mix thoroughly. Cover and cook over low heat for about 4 minutes.

Makes 4 servings
