Rainbow Zucchini RollsPrint
- 3-4 Tbsp. hummus
- 1-2 zucchini, thinly sliced lengthwise
- 1 carrot, thinly sliced
- 1 red, orange, or yellow bell pepper, cut into small pieces
- 1/2 cup chopped red cabbage
- 1/2 cup chopped cilantro
- 1 pkg. Tofurky Slow Roasted Thai Basil Chik’n (optional)
- Apply a thin layer of hummus to one side of each zucchini slice.
- Top with the remaining ingredients, then roll and pierce with a toothpick to hold the shape.
Makes 10 to 20 rolls
