Quinoa Salad

4 cups water
Pinch of sea salt
2 cups quinoa
2 Tbsp. sesame oil
2 Tbsp. brown rice vinegar
1/2 cup diced yellow pepper
1/2 cup diced carrot
2 Tbsp. parsley, chopped 2 Tbsp. sesame seeds

• Add the salt to the water and bring to a boil. Stir in the quinoa. Simmer for 5 minutes, covered tightly. Set aside, uncovered, to cool, then fluff with a fork. Allow 10 minutes to cool. Add the remaining ingredients, mixing gently.
• Serve at room temperature or chilled.

Makes 3 servings
