Quick Peanut Brittle

1 1/2 cups dry roasted peanuts
1 cup sugar
1/2 cup light corn syrup
Pinch of salt (optional)
1 Tbsp. vegan margarine
1 tsp. vanilla extract
1 tsp. baking soda

• Grease a baking sheet and set aside. In a glass bowl, combine the peanuts, sugar, corn syrup, and salt. Heat in the microwave on high for 6 to 7 minutes, until bubbly and the peanuts start to brown. Stir in the vegan margarine and the vanilla and heat in the microwave for 2 to 3 minutes.
• Quickly stir in the baking soda, until just foamy. Pour immediately onto the greased baking sheet.
• Let cool for about 15 minutes, until set. Break into pieces and store in an airtight container.
