Quick BLTA SandwichPrint
- 1 tsp. olive oil
- 2 slices vegan bacon (try Lightlife Fakin’ Bacon Strips)
- 2 slices whole grain bread
- 1 Tbsp. vegan mayonnaise
- 1 small tomato, sliced
- Spinach, romaine, or other dark leafy salad greens
- 1/2 avocado, sliced (optional)
- Heat the olive oil in a small skillet over medium heat. Add the vegan bacon and cook until golden on both sides.
- Meanwhile, toast the bread. Spread with the vegan mayonnaise and top with the “bacon,” tomato, greens, and avocado.
Makes 2 servings
*Variation: If you like a little extra kick, try sprinkling on hot sauce or salt for more flavor.
