Poppy-Seed Passion Dressing

1 cup cold water
2 tsp. cornstarch
6 Tbsp. lemon juice
1/4 cup maple syrup
1-2 Tbsp. poppy seeds
1/2 tsp. salt
1 tsp. dry mustard
1 tsp. paprika
1 tsp. lemon zest

• Cook the water and cornstarch over high heat until thickened and clear. Refrigerate for several hours, until well chilled.
• Combine the cornstarch mixture with the remaining ingredients in a large jar with a tight-fitting lid and shake well. Chill for several hours, shake well, and serve.

Makes about 1 3/4 cups
