“Pepperoni” Pizza Bread

2 large loaves Italian bread
3/4 cup olive oil
1/2 cup tomato sauce
2 packs soy pepperoni
6 oz. shredded vegan mozzarella soy cheese

• Preheat the oven to 375°F.
• Cut the bread in half lengthwise and set the top halves aside. Pour and spread the oil evenly onto both bottom halves, then spread the sauce evenly over the oil. Next add a layer of “pepperoni” and finish by sprinkling the soy cheese on top.
• Put the top halves back on the bread, wrap with foil, and bake for about 20 to 25 minutes or until soy cheese is melted.

Makes 4 servings
