Peanut Sauce

1/2 tsp. vegetable oil
2 Tbsp. shelled peanuts
1 Tbsp. minced shallots
1 tsp. soy sauce
Salt, to taste
Water as needed

• In a small pan, heat the vegetable oil over medium-high heat.
• Add the peanuts and stir-fry until lightly browned and fragrant. Remove from the pan and cool on a paper towel.
• Deep-fry the shallots.
• Using a mortar and pestle, combine the peanuts and the shallots to form a paste.
• Combine the peanut paste, soy sauce, and salt. Add the water (up to 2 Tbsp.) to create the desired dipping consistency.
