Oatmeal-Banana-Chocolate Chip Cookies

1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. sea salt
1/2 tsp. cinnamon
1/8 tsp. ginger
1 cup brown sugar
1 cup rolled oats
1 tsp. vanilla
1/4 cup vegetable oil
2 Tbsp. vanilla soy milk
1/4 cup mashed banana
1/4 cup carob or chocolate chips

• Preheat the oven to 375˚F. Lightly grease a baking sheet and set aside.
• In a large bowl, stir together the flour, baking powder, sea salt, cinnamon, ginger, brown sugar, and rolled oats
• Thoroughly mix in the vanilla, vegetable oil, soy milk, and mashed banana. Gently fold in the carob or chocolate chips.
• Place 16 equal-size scoops on the prepared baking sheet and bake for about 12 minutes. Remove from the oven and let cool on the baking sheet for 1 minute before transferring to a wire rack to complete cooling.

Makes 16 medium cookies
