Mushroom-Coconut Soup

1 cup vegetable stock
2 cups water
1/2 cup chopped shiitake mushrooms
1/2 cup chopped button mushrooms
1 cup coconut cream
2 Tbsp. lime juice
Salt, to taste
4 lime leaves

• In a small pot, bring the vegetable stock and the water to a boil over medium-high heat.
• Add the mushrooms, coconut cream, lime juice, and salt. Cook for 5 minutes, or until hot.
• Add the lime leaves and cook for another 2 to 3 minutes.
• Serve immediately.

Makes 4 servings
