Jerk Tempeh

1 cup apple or papaya juice
3 Tbsp. grated onion
3 cloves garlic, minced
2 Tbsp. soy sauce
2 Tbsp. minced fresh hot pepper
2 Tbsp. vinegar
1 Tbsp. oil
1 Tbsp. grated gingerroot
11/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. freshly ground black pepper
1/4 tsp. thyme
1 tsp. nutmeg
1 lb. steamed tempeh(or tofu frozen, thawed, and squeezed dry)
1/2 cup chopped scallions

• Combine all the ingredients together (except the tempeh and scallions) in a blender.
• Cut the tempeh into 1-inch cubes or 1/2-inch strips, and arrange them one layer deep in a glass pan. Pour the blended mixture over the tempeh. Work the sauce into the tempeh with a spatula or the palms of your hands. Let marinate for a few hours or overnight.
• Preheat the oven to broil, or heat the griddle.
• Broil for about 5 minutes, turn the tempeh over, and broil 5 more minutes. If you are cooking on an oiled griddle, brown both sides. Serve hot, garnished with chopped scallions.
