Jackfruit Nuggets

Ingredients

  • 1 can young green jackfruit

For the marinade:

  • 3 Tbsp. avocado oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika

For the wet batter:

  • 5 Tbsp. ground flax seeds
  • 3/4 cup water
  • 1/4 cup hot sauce
  • 1 1/2 Tbsp. mustard

For the dry batter:

  • 1 1/2 cups chickpea flour
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1 tsp. dried thyme
  • 1 tsp. dried parsley

Instructions

  • Drain and rinse the jackfruit. Cut into nugget-size pieces.
  • Combine the oil and marinade spices in a bowl. Add the jackfruit pieces and toss to coat fully. Set aside for at least 30 minutes.
  • Combine all the wet batter ingredients in a second bowl. Mix well and set aside.
  • Combine all the dry batter ingredients in a third bowl. Mix well and set aside.
  • Dredge the jackfruit pieces in each batter twice.
  • Warm some oil in a pan over medium heat and fry until golden and crispy. Let cool on a paper towel–lined plate. Serve with your favorite vegan dipping sauce.
