Green Beans With Parsley and Mint

1 lb. green beans, trimmed
1/4 cup packed parsley
1/4 cup pineapple mint leaves
3 Tbsp. lemon juice
1 1/2 tsp. sea salt
Black pepper, to taste
1 Tbsp. extra-virgin olive oil

• Cook the beans in boiling salted water until tender but still crisp. Drain and rinse briefly under cold water.
• In a food processor, combine the parsley, mint, lemon juice, salt, and pepper until minced.
• Toss the beans in the olive oil and drizzle the mint sauce on top. Season with salt and pepper.

Makes 6 servings
