Gingerbread Waffles

1/4 cup sugar
4 Tbsp. Earth Balance
Egg replacer equivalent of 2 eggs
1/2 cup molasses
1/2 tsp. ginger
1/8 tsp. salt
1/4 tsp. ground cloves
1 1/4 cups unbleached white flour
3/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 cup hot water

• Cream together the sugar, Earth Balance, and egg replacer. Stir in the molasses and set aside.
• Sift together the dry ingredients. Gradually pour into the margarine mixture and mix lightly. Add the hot water. Beat hard to make a smooth batter.
• Bake in a preheated waffle iron for 3 to 5 minutes, or until the waffles are the desired color and the steaming stops.

Makes 2 to 3 servings
