Ginger Baked Tofu

2 blocks firm tofu
1/3 cup soy sauce
1 cup water
1 Tbsp. ginger, minced
1 Tbsp. garlic, minced
1 Tbsp. sesame oil
Sesame seeds

• Preheat the oven to 425°F. Spray a baking sheet with cooking spray.
• Slice each tofu block into 4 large rectangular pieces and lay in a single layer on the baking sheet.
• Whisk together the soy sauce, water, ginger, garlic, and sesame oil and pour over each piece of tofu. Sprinkle with the sesame seeds.
• Bake for 30 minutes, then rotate the pan and cook for 15 minutes, until the liquid is mostly gone but not completely dry.

Makes 8 servings
