Fresh Green Beans With Ginger-Lime Sauce

1 lb. fresh green beans, stems trimmed
1 shallot, finely chopped
1 handful fresh cilantro, leaves chopped (or parsley)
1 tsp. finely chopped garlic
1 banana pepper, chopped
3 Tbsp. sugar
3 Tbsp. minced ginger
2 Tbsp. tamari
3 Tbsp. lime juice
3 Tbsp. water
1 tsp. sesame oil

• Fill a large pot with water and a pinch of salt. Bring to a boil.
• Blanch the green beans for 2 to 3 minutes. Drain and transfer to a bowl of ice water to stop the cooking.
• Drain and transfer to a serving bowl. Add the shallot and cilantro.
• In a jar, combine the garlic, banana pepper, sugar, ginger, tamari, lime juice, water, and sesame oil. Close with a lid and shake vigorously until fully emulsified. Set aside for 20 minutes to let the flavors develop. Shake again and pour over the green beans.

Makes 4 servings
