Flaky Pie Crust

2 cups all-purpose flour
1 1/2 Tbsp. sugar
1/2 tsp. salt
1/2 cup plus 2 Tbsp. Earth Balance or other vegan margarine, cut into small pieces
2 Tbsp. vegetable oil
3 Tbsp. cold water

• In a large bowl, combine the flour, sugar, and salt.
• Add the margarine, incorporating quickly until crumbly.
• In a small bowl, thoroughly mix the oil and the water. Combine with the flour-and-margarine mixture and lightly knead.
• Flatten the dough into a disc, wrap in plastic, and chill for at least 30 minutes.

Makes 1 crust
