Diego’s Fajita Pizza

1 green pepper, seeded and chopped
1 onion, chopped
1 hot red pepper, seeded and sliced
1 Tbsp. olive oil
1 container pre-made vegan pizza dough
1 cup pizza sauce
2 cups vegan mozzarella or pepper jack cheese
1 1/2 cups diced vegan chicken

• Preheat the oven to 400°F. Coat the onion and pepper in the olive oil and roast, stirring occasionally, for 1 hour, or until soft. Remove from the oven.
• Lower the heat to 350°F.
• On a lightly greased baking sheet, spread out the pizza dough. Use a fork to prick the center. Spread the sauce to the edges of the crust and sprinkle on half of the “cheese.” Top with the vegan chicken and the remaining “cheese.” Bake for 10 to 15 minutes, or until the crust is golden.
