Curried “Chicken” Salad

  • 1 cup Beyond Meat’s Grilled Chicken Strips, cooked and chopped
  • 1/4 cup vegan mayo
  • 1/3 cup celery
  • 3 Tbsp. raisins or dried cranberries
  • 3 Tbsp. sliced almonds
  • 3 Tbsp. scallions, chopped
  • 1/2 Tbsp. curry powder
  • Juice of 1/2 lemon 
  • Pinch of salt 
  • Pinch of white pepper, or black pepper 


  • Cook vegan chicken according to package directions.
  • Combine all ingredients until mixed thoroughly.
