1 1/2 cups cornmeal
1/2 cup water
4 Tbsp. nondairy margarine, melted (try Earth Balance brand)
1 Tbsp. maple syrup
1/2 tsp. salt
3 to 4 Tbsp. vegetable oil

•Combine the cornmeal, water, margarine, maple syrup, and salt to form a batter.
•In a cast-iron skillet, heat 2 Tbsp. oil over a high flame.
•Drop 1 Tbsp. of the batter into the hot oil. Flatten with a spatula and fry until crisp and brown on both sides.
•Continue with the remaining batter, adding additional oil to the skillet if needed.
