Black-Bean Dip

2 15-oz. cans black beans
2 tsp. chopped garlic
2 Tbsp. chopped fresh cilantro (or 1 Tbsp. dried)
2 small tomatoes, chopped and divided
2 tsp. crushed red pepper (or to taste)
1 tsp. cumin
Juice of 1 lime
2 green onions, chopped
Salt and pepper, to taste

• In a food processor, coarsely chop the black beans, garlic, cilantro, and one of the chopped tomatoes. Transfer to a serving bowl.
• Top with the red pepper, cumin, lime juice, onions, and remaining chopped tomato and season with the salt and pepper.
• Chill for 3 to 4 hours before serving.

Makes 10 servings
