Travelers and employees at Newark Liberty International Airport can now pick up some of the best vegan food around, thanks to a new restaurant, Thyme, located in Terminal C and operated by Amanda Cohen, the Michelin-recognized chef widely credited with leading the vegetable-focused food movement in New York City. And in recognition of the moment, PETA is presenting Thyme with its first-ever Best of Newark Airport Award.

The eatery’s vegan fare includes braised shiitake mushrooms, grilled romanesco “steak” with cashews and creamed kale, purple yam fried “rice” with kimchi, sunchoke ratatouille, and a host of creative, fresh squeezed–juice cocktails, among other delectable options.

“Busy people today are demanding healthy, humane cuisine, so Thyme has arrived right on time,” says PETA President Ingrid Newkirk. “PETA is recognizing the restaurant for treating travelers to delicious food and proving how easy it is to go vegan.”

Vegan eating is on the rise, and the market for meat alternatives is expected to reach $5.17 billion by 2020—a 6.4 percent increase from 2015. In the National Restaurant Association’s What’s Hot 2016 Culinary Forecast, vegan entrées placed among the top 10 in the “main dishes” category.

PETA—whose motto reads, in part, that “animals are not ours to eat”—notes that vegan meals spare animals daily torment and a terrifying death in today’s industrialized meat, egg, and dairy industries. People who go vegan also have a lower risk of suffering from heart disease, cancer, obesity, and strokes and dramatically reduce their carbon footprint, as animal agriculture is one of the biggest producers of the greenhouse-gas emissions that contribute to climate change.

Cohen previously won first place in PETA’s Fine Faux Gras Challenge for her portobello mushroom mousse. Thyme will receive a letter of congratulations and a framed certificate.
