Vegetarian Roast Pork Buns

For the Filling:
1/2 lb. seitan, diced
3/4 cup water
1/2 tsp. vegetarian oyster sauce
1 tsp. dark soy sauce
1 tsp. light soy sauce
1/4 tsp. salt
1/4 tsp. sugar

• Combine all the ingredients in a bowl. Cover and let marinate in the refrigerator for at least two hours.

For the Buns:
1 cup low-gluten wheat flour
6 Tbsp. cold water
1/4 cup sugar

• Combine all the ingredients and knead out palm-size circles. Fill each with a spoonful of the filling and close at the top.
• Place in a steamer and steam for 8 minutes. Serve immediately.

Makes 4 to 6 servings
