Fresh Shiitake Pate

1 cup chopped onion
1 clove garlic, pressed
1 Tbsp. olive oil
1/2 lb. fresh shiitake mushrooms, chopped (about 4 cups)
1 tsp. soy sauce
1 tsp. savory
1/2 tsp. thyme
1/4 tsp. nutmeg
1/8 tsp. black pepper

• Sauté the onion and garlic in the olive oil. When the onion starts to soften, add the shiitake mushrooms and cook over low heat for about 5 minutes. Add the remaining ingredients and simmer about 10 more minutes over low heat.
• Purée all the ingredients together in a food processor or blender.
• Serve hot or cold.

Makes about 2 cups
