Easy Bean Salad

1 15-oz. can kidney beans
1 15-oz. can pinto beans
1 15-oz. can black-eyed peas
1 10-oz. pkg. frozen lima beans
1 cup frozen corn
1 large red bell pepper, finely diced
1/2 medium sweet onion, chopped
1/2 to 3/4 cup low-fat Italian salad dressing
1/2 tsp. black pepper
Salt and pepper, to taste

• Drain and rinse the canned beans.
• In a medium bowl, combine all the beans, corn, red pepper, and onion and stir to mix.
• Add the dressing and pepper and toss to mix.
• Season with salt and pepper and serve.

Makes 6 to 8 servings
