Chipotle Split-Pea Soup

2 cups dried split peas
8 cups boiling water
1 medium-sized onion, chopped
2 cloves garlic, minced
2 carrots, sliced diagonally
1/2 cup chopped parsley
1 tsp. chipotle, finely cut, to taste
1 Tbsp. low-sodium soy sauce

• Simmer the split peas in boiling water until soft, about 1 hour.
• Add the remaining ingredients and continue cooking until the vegetables are tender, adding more water as needed.

Makes 10 1-cup servings
