2 Tbsp. dried minced onion
1 garlic clove, crushed
1 Tbsp. minced parsley
1 tsp. salt
Black pepper, to taste
8 potatoes, sliced
8 oz. vegan cream cheese, cubed
• Lightly grease a slow cooker.
• In a small bowl, combine the onion, garlic, parsley, salt, and pepper.
• Layer 1/4 of the sliced potatoes on the bottom of the slow cooker. Sprinkle with 1/4 of the seasoning and top with 1/3 of the vegan cream cheese cubes. Repeat the layers, ending with the seasonings.
• Cover and cook on high for 3 to 4 hours, or until the potatoes are tender. During the last half hour of cooking, stir the potatoes.
