Cauliflower “Meatballs”

Ingredients

  • 1 Cauliflower head
  • 1 Onion
  • 1 Cup flour
  • Olive oil for frying
  • Breadcrumbs
  • 1 Tbsp pepper
  • 1 Tbsp salt
  • 4 Tbsp vegan butter (try Earth Balance)

Instructions

  • Cook cauliflower for 30 minutes
  • When soft and ready, chop cauliflower into small pieces
  • Put the cauliflower pieces in a mixing bowl and mash until puréed
  • Add vegan butter
  • Finely dice the onion and add to bowl
  • Add salt and pepper to taste
  • Add 4 Tbsp. of flour and let stand for 10 minutes
  • Shape mixture into balls, roll in bread crumbs and fry over low heat
  • Ready to eat!

These cauliflower “meatballs” are perfect for any soup or dish. They’re delicious and healthy!
