Chipotle’s test kitchen has been busy lately, perfecting a quinoa medley that’s set to be the Tex-Mex chain’s next healthy vegan addition to its menu. The new dish is made with red and gold quinoa, cumin, and chopped cilantro tossed with citrus juice. It will serve as a protein-packed substitute for rice in burritos and tacos or as a topping for salads.

This comes on the heels of the extremely popular Sofritas, made with shredded organic tofu that’s braised with chipotle peppers, roasted poblanos, and spices.


How do you order vegan at Chipotle? Choose a burrito, taco (soft or crispy), or bowl, plus any of these great vegan additions:

  1. Sofritas
  2. Beans (pinto or black)
  3. Rice (white or brown)
  4. Fajita vegetables (green peppers and red onions with salt, oregano, and rice bran oil)
  5. Guacamole
  6. Chips and salsa
