Kale Chips

Kale is one of the most nutrient-rich greens out there, and according to WebMD.com, one cup of it has "5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K."

Kale can be tossed in olive oil and seasonings and then baked to form crispy chips that taste surprisingly indulgent.

These chips can be enjoyed as a snack, or you can use them in a "whatever-I-can-grab" pasta dish. Chickpeas, lemon juice, garlic, and olive oil complement baked kale nicely, but mix and match ingredients to your liking.

Enjoy!
