Peanut Noodle Salad

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 Tbsp. sesame oil
  • 2 Tbsp. Sriracha
  • 1/4 cup water
  • 1 Tbsp. ginger
  • 3 cloves garlic, minced
  • 2 Tbsp. brown sugar
  • 1 pkg. pasta, cooked and drained (we used linguine)
  • 1/2 cup shredded carrots
  • 1 cucumber, thinly sliced
  • 1/2 cup chopped green onions
  • 2 bell peppers, thinly sliced (we used green and red)
  • Sesame seeds, for garnish 

Instructions

  • Place the peanut butter, soy sauce, rice vinegar, sesame oil, Sriracha, water, ginger, garlic, and brown sugar in a large bowl and stir until well combined and smooth.
  • Add the pasta and vegetables and stir until evenly coated.
  • Refrigerate for 45 minutes. Don’t forget to top each serving with some sesame seeds!
