Los Angeles – With Memorial Day around the corner, I thought your readers might be interested in PETA’s new summertime cooking video starring Transformers: Age of Extinction and Saving Mr. Banks star Victoria Summer.

In the new video, Summer shows how easy it is to prepare a fresh and delicious vegan dish—in this case, Italian Stuffed Zucchini—and in a video interview with PETA, she talks about why she chooses to stick to cruelty-free dishes such as this one. “I’m a huge animal lover, firstly,” she says. “And I did more and more research into … factory farming conditions—animals being kept in filthy environments, deprived of exercise, given drugs, and living in conditions which otherwise would kill them. And in respect to animals, I decided that I was going to become vegan.”

Summer says that since she went vegan, she has “much more zest for life and energy”—and although she enjoys going out to Los Angeles’ trendy vegan restaurants, she loves getting into the kitchen and trying out new quick, easy, and delicious vegan recipes.

Both of Summer’s videos are available here, and more summertime recipes perfect for Memorial Day weekend are available here.
