After Così introduced tofu, PETA encouraged the company to add more vegan options so that it could be enjoyed with more than just a modified salad. The chain, which has over 70 locations, subsequently added a Thai Curry Tofu Bowl to its menu—and it’s vegan if you hold the side of bread.
