German Potato Salad

4 large potatoes, scrubbed
1 Tbsp. canola oil
5 slices Lightlife bacon strips
2 Tbsp. Florida Crystals or unrefined sugar
1 Tbsp. all-purpose flour
1/3 cup water
1/4 cup white wine vinegar
1/2 cup chopped green onions
Salt and pepper, to taste

• Boil the potatoes until tender but still firm. Set aside to cool completely, then coarsely dice.
• Heat the oil in a skillet and cook the Lightlife bacon until crispy. Crumble the bacon, set aside in a separate container, and reserve the oil.
• In the same skillet, put the Florida crystals, flour, water, and vinegar. Stir to combine, and cook until thickened.
• Once this dressing is thickened, add the potatoes, “bacon,” and green onions to the skillet and stir to coat the potatoes.
• Keep cooking until everything is heated through and season with salt and pepper. Serve hot.

Makes 4 servings

        i never heard of a “german potato salad” with bacon and flour in it ???!!! :-o and i am german…. :-?

        the normal german potato salad s just done with:
        potatoes, of course and dont boil them peeled but as jacket potatoes. let them cool down after and peel them then. slice em …and that s them prepared
        (we dont boil them peeled because it gives them a stronger potato-taste in the end when u start em off as jacket potatoes ;-)
        sauce:
        oil, a little white wine vinegar, mayonnaise, onions, water, (2-3 eggs…but u can leave em out as well if it should be a vegetarian salad), maybe a little garlic, thinly diced gherkins, salt n pepper (season),…

        DONE

        The secret lies in letting it set all together for a couple of hours (better over night) in the fridge.

        Then you got a proper german potato salad in the end.

        I do not know what lightlife bacon is – sounds as artificial as vegan cheese, I must admit. As I´m German I can assure you: You can do this salad perfectly “German” without that bacon-replacement. Simply without it. We love this light version of potato salad very much here.
