Deep-Fried Tofurky

1 Tofurky roast
2 Tbsp. melted margarine
3-4 Tbsp. Cajun or Creole seasoning
Peanut oil for frying

• Thaw the Tofurky according to package directions.
• Bake, covered in foil, in a 300°F oven for 1 hour. Remove from the oven and remove the foil.
• Spread with the margarine and sprinkle liberally with the seasoning. Fry in a deep fryer for 10 minutes, or until golden brown.

Makes 4 to 6 servings

    I love tofurkey. Have used it at Christmas and Thanksgiving for years. We just follow the directions on the box and baste it with the soy sauce they suggest. It is easy to prepare and doesnt need any kind of special recipe. The dumplings that come with it are good too.
