In a large food processor, pulse the seitan, syrup, vinegar, mustard, olive oil, rosemary, and 1/2 teaspoonful each of thyme, salt, and pepper until well combined. Add the almond meal and 1/3 cup of the breadcrumbs.
Place the remaining cup of breadcrumbs in a bowl and combine with a dash each of thyme, salt, and pepper.
Form the seitan mixture into small patties and dredge in the breadcrumbs. Fry in the oil for about 4 minutes on each side, or until crispy.
