Creamiest Tomato Soup With Cashews

When the weather gets cold, I love a rich, creamy bowl of soup. Who doesn’t? It’s the best. My favorite is tomato soup, but I have to admit, I’m a little picky about it. I like my tomato soup thick and creamy. It shouldn’t have chunks, and it shouldn’t be brothy.

I finally decided to try and make my own tomato soup; it seemed only logical. I was blown away by not only how easy it was to make but how amazingly flavorful it was. Since it is nearly as easy as heating up a can of soup and about 10,000 times better, I don’t think I’ll ever go back to eating pre-made soup again.

The key to making it so rich and creamy was cashews. I considered using some sort of soy creamer but knew it wouldn’t give it the right density or the subtle nuttiness.

I most definitely had seconds (and thirds). It was hearty enough to eat on its own, but since I ate it a few nights in a row, we also had some kale and roasted butternut squash to go along with it.

Creamy Tomato Soup
1/2 cup cashews
1/2 cup vegetable broth
2 Tbsp. Earth Balance
1 small onion, chopped
2–4 cloves garlic, minced
1 28-oz. can whole peeled tomatoes
1/3 cup nutritional yeast
Salt and pepper, to taste

  • In a food processor, blend together your cashews and vegetable broth until smooth. Pour into a separate container and set aside.
  • In a medium sauce pan, over medium heat, melt the Earth Balance. Add the onions and sauté for about 2 to 3 minutes. As they begin to become fragrant, add in the garlic and sauté until your onions are soft and translucent, stirring so as not to burn. Add in your tomatoes, including any liquid in the can. Reduce the heat and simmer for 10 minutes.
  • Remove from the heat and let cool for a few minutes before pouring into your food processor. Blend until combined and not chunky. Add in the nutritional yeast and pulse to combine. Add in the cashew mixture and blend until very smooth. Season with salt and pepper to your liking and pulse a few times.

It will be fairly thick, so if you like a less robust soup, add more vegetable broth.

    This was easy to make and delicious. The recipe didn’t specify what type of cashews. I used raw. I also used Muir Glen tomatoes with basil. The soup was very rich and creamy. I will definitely make it again with grilled Daiya cheese sandwiches.

    Yeah, please stop complaining, people. I think the idea was for this recipe to be super easy. If you want to eat “fresh” tomatoes” that have travelled 10,000 miles to get to your dinner plate go for it. As far as Earth Balance goes, it’s the best alternative to dairy!!!

    I have a lot of food allergies, and this recipe looks great! If you don’t like it, why bother complaining? Move on!

    This recipe looks delicious-can’t wait to try it. and I love the fact that it doesn’t call for extreme ingredients but instead all are readily available. For some of us, organic canned tomatoes are much better than the paltry hot-house raised flavourless tomatoes we can buy at this time of year.

    I LOVE tomato soup and this variation adds wonderful variety! I love the cashew idea! Don’t let the nay sayers bother ya! And I use real butter. GREAT SOUP!!!!!

    I’ll join to the complainers.Why canned tomatoes? Why we have to buy a certain brand? And , what about the cashews? Should be raw? Roasted or how?

    Sound yummy!!! =9 I’ll give it try soon!!! @Lynn Nutritional yeast is just deactivated yeast…I don’t think it has any msg…at least mine doesn’t XD In any case, if you’re in doubt, check labels or contact the manufacturer =)

    I already tried this soup and I will tell you that this was awesome. Well I enjoyed it anyway. I’m quite use to the Vegan recipes.

    I will try this version of tomato soup using cashews. Perhaps saute the onions in walnut oil rather than vegan spread. And a bit of hot pepper!

    Tomatoes aren’t in season here in the dead of winter, so it makes perfect sense to me to use canned tomatoes rather than some that have been trucked in from another country or gas-ripened into mealy blandness. In fact, there are many people who have learned to can their own from summer’s harvest…they are among the easier veggies to home-can. Thanks for the recipe…it sounds delish!

    Agreed, the negativity is silly. If you have fresh tomatoes, use them. Most of us who have been vegan for a while use Earth Balance, it’s the best, and know nutritional yeast does NOT contain MSG. I’m in the process of making this right now. It sounds awesome. When we do tomato soup my husband does the grilled cheese sandwiches on the Foreman grill, sprays the corn/rye bread with olive oil spray and we love Daiya cheese. Real comfort food. Add a glass of wine and I’m in food heaven.

    Raw cashews?
    Will make this tomorrow if I buy cashews. Canned tomatoes are very good and I love experimenting w nutritional yeast.

    I had to look up “earth balance” as had no idea what it is!! Turns out it’s just vegan margarine – why not just say vegan margarine!!!!!

    Aren’t there real tomatoes anymore ?
    By using canned tomatoes the principle of using natural products is half wasted
