‘Win It’ Wednesday: Vegan Cupcake Baker Coffee Mug

Sure, I realize that no matter how “low-fat” they are, cupcakes are not exactly health food—but they are still my favorite food group. Chocolate stout cupcakes, s’mores cupcakes, jelly donut cupcakes—they’re all good. I love to bake cupcakes, decorate cupcakes, read about cupcakes, eat cupcakes (duh)—heck, I would even wear cupcakes if I could.

So, of course, I want must have one of these adorable Vegan Cupcake Baker mugs from CakeSpy. It’s the perfect thing for sipping a soy latte while perusing my favorite cookbook.

    Dark chocolate cake with a Tofutti “cream cheese” and peanut butter centre. Topped with piped vegan buttercream. I made these for a babyshower. They were a huge hit.

    I would love a vegan cupcake that somehow incorporated the likes of coconut shavings atop a fluffy spongelike breading. On top of the coconut shavings would be a melted layer of dark milkfree chocolate with a small bit of brown sugar dropped on top. Lastly there would be a little toothpick flag stuck in the center that reads “My cupcake is better than yours.”

Lemon Cream Vegan Cupcake Recipe Lemon Cream Vegan Cupcakes Ingredients 1 c margarine 80 fat is best softened 2 c organic unbleached sugar 24 c soy yogurt 14 c apple sauce 2 t grated lemon rind 1 t vanilla 3 12 c allpurpose flour 2 t baking powder 1 t baking soda 2 c Vegan Sour cream 1 pound softsilken tofu 4 T lemon juice 6 T canola oil 4 t brown rice vinegar 1 12 t salt Lemon Cream Cupcakes Frosting Ingredients 3 tbsp margarine 80 fat is best softened 2 14 c organic unbleached sugar 2 tbsp lemon juice 34 t vanilla 14 t grated lemon rind 1 or 2 tbsp plain unsweetened soy milk make sure soybeans and water are the ONLY ingredients In a mixing bowl cream margarine and organic unbleached sugar. Mix soy yogurt and apple sauce. Add lemon peel and vanilla mix well. Combine dry ingredients add to creamed mixture alternately with sour cream batter will be thick. Fill greased or paperlined muffin c with 14 c of batter. Bake at 350 for 2530 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes remove to wire racks to cool completely. Cream margarine and organic unbleached sugar in small mixing bowl. Add lemon juice vanilla lemon peel and soy milk beat until smooth. Frost cupcakes.

    Ok i have a really good one. If anyone has had a hummingbird cake imagine a hummingbird cupcake! The Loving Hut in Norcross GA makes the cake but needs to totally start making cupcake versions! OMG bc a smaller version is totally cuter and more customizable than the cake but still has the awesome flavor!!! I LUV LOVING HUT PETA!!!

    The best vegan cupcake I could imagine maybe attempt to make sometime would be a vegan banana + peanut butter w chocolate icing topped with almonds. MMMmmmm! Love the mug! What a cutie!

    S’mores! Especially right now during summer and picnic season. How about vanilla cupcake with a marshmallow fluff center dark chocolate icing and Graham cracker sprinkled on top? All vegan of course. Mmmm…I’ll be in my kitchen…

    I think a watermelon cilantro cupcake with lemon frosting would be amazing!!! We came up with this blend when making soap and it just smelled so good that I couldn’t help but think it would taste good too!! Don’t knock it remember the pineapple cilantro candle craze? That blend is amazing on fish!

    My favorite vegan cupcake recipe is a raw vegan cheesecake cupcake. Using soaked almonds and cashews or if fat conscious bananas flax seed and dates food processed together as the thickening agent you can make strawberry cheesecake or chocolate or whatever one pleases. Delicious!

    So I have been trying to perfect a vegan toffuti cream cheesecheese cake filled cupcake. It is a chocolate cupcake sweetened with agave nectar with a plop of the vegan cheese cake listed on the goveg site and topped with a chocolate raspberry frosting. Super yummy but not quite perfected yet

    I’m trying to figure out a receipe for butterbeer cupcakes butterbeer is cream soda with butterscotch flavoring a favorite of Hogwarts students. The cupcakes would have vegan butterscotch frosting of course!

    Any flavor cupcake from “Sticky Fingers” vegan bakery in Washington DC. I am partial to the peanut butter ones. They have about 20 one with alcohol to choose from and make vegan wedding cakes!
