1 Tbsp. nondairy margarine (try Earth Balance brand)
2 slices vegan bread (try Cobblestone Mill Whole Wheat Bread)
2-3 Tbsp. pizza sauce
2 slices soy mozzarella cheese
1 mushroom, sliced (optional)
1 Tbsp. onion, minced (optional)
4 slices vegetarian pepperoni (try Yves Veggie Pizza Pepperoni)
•Spread the margarine on one side of each slice of bread. Lay one piece of bread, margarine-side down, into the hobo pie iron.
•Spread the pizza sauce on the bread and cover with 1 slice of soy mozzarella cheese. Top with the mushroom, onion, and vegetarian pepperoni. Add the remaining soy cheese.
•Lay the other slice of bread, margarine-side up, on top. Close the hobo pie iron and cook for 2 to 3 minutes per side.
