Sweet Potato Surprise

6 medium sweet potatoes (precooked)
1/2 cup orange juice
3 1/2 Tbsp. margarine
1/2 tsp. vanilla
Salt, to taste
1/4 cup flour (white or whole wheat)
3/4 cup chopped nuts (such as pecans or almonds)
1/2 cup brown sugar

• Preheat the oven to 350°F.
• Mash the sweet potatoes with the orange juice and add 1 1/2 Tbsp. margarine, the vanilla, and a little salt. Bake for 20 minutes.
• Combine the remaining ingredients (including 2 Tbsp. of margarine) and spoon on top. Bake for another 20 to 30 minutes.

Makes 4-6 servings
