1 cup all-purpose flour
1/3 cup granulated sugar
Egg Replacer equivalent to 1 egg
1 tsp. baking powder
1/4 tsp. vanilla extract
2 Tbsp. dairy-free margarine
Vegetable oil
1/2 cup confectioners’ sugar

• Sift the flour into a bowl. Combine with the sugar, egg replacer, baking powder, vanilla, and margarine. Mix until a dough forms. Set aside and let rise.
• Shape into 18 to 20 cookies. Heat the oil on medium-high and fry the cookies for 4 minutes, or until golden brown.
• Sprinkle with confectioners’ sugar.

Makes 18 to 20 cookies
